Honey is a natural resource of almost infinite variety. The color, aroma and flavor of a particular honey depends on the nectar source. Blueberry honey, for example, tastes entirely different from honey made by bees who feed on wildflowers.
Honey can range in color from clear, amber and molasses-colored. Honey being extracted in the spring is much lighter then in the fall. Again due to nectar source.
Honey is composed of two main sugars, levulose and dextrose. These sugars do not need to be broken down by the digestive process, so honey is quickly absorbed into the bloodstream, giving a quick energy boost to the body.
Not only does honey taste good, there are many benefits to using honey. Honey contains protein, vitamins and minerals, but no cholesterol.
Many people swarm to honey for it's anti-bacterial and anti-inflammatory properties.
Holistic practitioners consider it one of nature's best all-around remedies.
